Hello friends! If you’re following me on Instagram, you’d see that I posted one of my favorite Fall soup recipes the other week. This soup deserves more credit, so that’s why I am dedicating a blog post to it, where you can go back and easily find and share this delish recipe! With Fall right at our front door, these veggies combined with the spices creates such a wonderful smell in your kitchen! This recipe is a great way to please both you and your kids; a showstopper for sure. Scroll down to see the FOUR easy steps to cook this meal at home!
1.) Combine the following in a Vitamix: 1 whole carrot, 2 celery sticks, handful cilantro, 1 red pepper, 1/2 onion, handful of cauliflower, 4 garlic cloves, 1 tbs cumin, 1 tbs chili powder, 1tsp salt, 1/2 tsp pepper, 1 can of diced tomatoes and 2 cups chicken broth. BLEND.
2.) Dice remaining onion, 1 whole carrot, 1 stick celery, red bell pepper and sauté in pot. Add in shredded chicken, rotisserie works well!
3.) Pour in soup base and simmer for 20 minutes. As it’s simmering, add in about 4 more cups of chicken broth and more seasonings to taste.
4.) Serve over rice, with sour cream, cheese, avocado, and cilantro! Voila! Go as fancy or as simple as you want.
